To understand the beginnings of the New Republik one must travel back to the not so distant past to the People’s Republik of Cambridge. For those unfamiliar, the People’s Republik (affectionately known simply as “the peeps” to many) was a long standing and much revered institution located just outside bustling Central Square in the heart of Cambridge. Sadly,the uncertainty of Covid-19 and ongoing landlord disputes made for a tough decision by the owners to shutter the People’s Republik and retire. Former owners of the People’s Republik Robert and Mary had a big hand in helping form the New Republik. With their continuous moral support and enthusiastic passing of the torch to a new generation. We thank them dearly.
There was always a close bond among long time staff at People’s. Many of whom have joined the team at New Republik. This includes our wonderful Husband and Wife Chef team Luisa and Edy. They continue to amaze with their creative new dishes and classic New Republik favorites. On a mission to resurrect the spirit of the People’s two long time veteran People’s bartenders Patrick Gallivan and Maxwell Greene took the challenge and opened the New Republik. A new business from an old spirit rising like the phoenix. A big thank you to all those along the way who made our dream possible.
